The other day when I was experimenting with the brownie crust for the Coconut Almond Brownie Bars I had some mix leftover and I hate to waste. I figured the crust for the brownies turned out so beautifully I would try making it again but rolling it out into one big cookie and baking it. Seriously…my…best…discovery…ever!
You only need two ingredients (for the sandwiches you’ll need three), it is super fast, easy, and really cheap! Win, win, win!

- 1 1/2 cups boxed brownie mix
- 1/2 cup butter, softened
Preheat oven to 350 degrees. In a medium bowl or food processor mix the brownie mix and butter until it forms a dough. Dump out onto a board and form into a ball. Place onto a baking sheet lined with parchment paper. Roll out until about 1/8″ thick. Bake for 8 minutes. Allow to cool for a minute and use a round 1″ cookie cutter to punch out 12 cookies. Save the excess cookie scraps and freeze it for ice cream toppings, parfaits, or a midnight chocolate fix.
In honor of St. Patrick’s Day and the fact that my hubby loves mint chocolate chip ice cream I thought I would pair the two together. Great idea! They turned out so yummy!
Brownie Wafer Ice Cream Sandwiches
- 12 brownie wafers
- 6 tblsp mint chocolate chip ice cream
Place a tblsp of ice cream between two wafers. Freeze until hardened. Allow to soften a couple of minutes before serving.
