I am not one for fun and games. Ask anyone who knows me and they will tell you that I am rather boring. Okay, maybe I am exaggerating just a bit but I will wholeheartedly admit that my husband is already the cooler parent while I, on the other hand, am already way behind on the times. Seriously, the only reason I know the song “Dynamite” by Taio Cruz is because my son sang it in his music class. Sigh.
Well, I am hoping to close the market on coolness after serving these fun cupcakes for dinner on April Fool’s Day tomorrow! We will be having dessert for dinner and dinner for dessert! That’s right, I have no problem baiting my children with baked goods. Our first course begins with Spaghetti and Meatballs. Followed by some Peas and Carrots and we will finish off the night with a Cupcake (Meatloaf with Mashed Potato Dollop) for dessert.
I used a Devil’s Food box cake to make the sweet cupcakes. I had some leftover after I was done so I just froze them for experimenting or snacking on later.
Spaghetti and Meatball Cupcake
- 5 cupcakes
- Vanilla Frosting (homemade or can)
- a plastic bag
- 15 cake balls (mix 3 cupcakes with a few tblsps of chocolate frosting, form into teaspoon size balls, and freeze for use later)
- 3 tablespoons of strawberry jam
- grated white chocolate
On each cupcake spread a dollop of frosting. Place some frosting into a plastic bag, seal, and snip a tiny bit off of a corner. Now pipe the frosting onto the cupcake in a random squiggly fashion. (Squiggly – now that’s technical!) Place 3 cake balls onto each cupcake. Warm the jam in the microwave for 10-15 seconds and drizzle over the “meatballs”. Sprinkle with a bit of grated white chocolate.
Peas and Carrots Cupcake
- 5 cupcakes
- Vanilla Frosting
- green food coloring
- 5 orange starburst
- 30 green M&M’s
Tint the vanilla frosting green. Spread a dollop of the frosting onto each cupcake. Cut the Starburst into little triangles. Place the M&M’s and Starburst randomly around the cupcake.
