Chicken Scallopini

This recipe is budget gourmet food at it’s best!  It is quick and easy for everyday cooking but fancy enough for entertaining.  I found it in one of my favorite cookbooks soon after I was married and have perfected it over the years.  Now when I say perfected I really mean it’s fine for now.  Change in the kitchen is not always a bad thing!

Chicken Scallopini

  • 3 large chicken breasts
  • 3/4 cup flour
  • 4 tsp garlic salt
  • vegetable oil for cooking
  • 3 tblsp butter
  • 1/3 cup chicken broth
  • 2-3 tblsp lemon juice
  • lemon slices for garnish

Begin by butterflying the chicken breasts and separate the two halves.  Next pound the chicken breasts with a meat mallet until 1/4 inch thick.

In a large skillet heat 3 tablespoons of oil over medium-high heat.  In a large bowl mix the flour and the garlic salt.  Dredge half of the chicken in the flour mixture and place in the hot oil.  Cook for 2 minutes on each side.  Remove chicken and keep warm.  Repeat the previous steps with the remaining chicken breasts and 3 more tablespoons of oil.

Once the chicken is cooked drain any excess oil.  Add the butter, broth, and lemon juice to the skillet.  Bring to a boil and be sure to scrape of any brown particles from the skillet.  This will add a lot of flavor to the sauce and help thicken it.  Boil until the sauce is reduced by half and begins to thicken slightly.  Pour over the chicken and serve with extra lemon wedges.

Roasted Asparagus

Preheat oven to 350°.  Wash and trim about 1 lb of asparagus.  Place on a baking sheet and spray with cooking oil.  Season with salt and pepper.  Bake for 10-12 minutes.
