If you could have seen me 7 years ago around this time you would have seen an enormously pregnant woman. I was just days away (or so I thought) of giving birth to my first son. As with pregnancy and birth my son had other plans and he decided to grace us with his presence a week late. Even then he needed some coaxing. On that blessed, long awaited day almost 7 years ago my life changed. I became a mother.
One of my greatest joys in life is being a mother. It is only now that I understand what it means to be a mother.
Sophia Loren said it best,
“When you are a mother, you are never really alone in your thoughts.
A mother always has to think twice, once for herself and once for her child.”
I was truly blessed with a wonderful mother and I am humbled to share the badge of motherhood with her. Although I may not live in close enough proximity to make her these delicious pancakes I am dedicating this post to her. She taught me what it was to be a mother. I love you Mom! You are an amazing woman!
With regards to cooking, I learned from my mother to have ripe bananas on hand for banana bread. I love banana bread as much as the next person but if you have some ripe bananas sitting around the house this Mother’s Day give these Banana-Nut Pancakes a try!
