Banana-Nut Nutella Pancakes

If you could have seen me 7 years ago around this time you would have seen an enormously pregnant woman.  I was just days away (or so I thought) of giving birth to my first son.  As with pregnancy and birth my son had other plans and he decided to grace us with his presence a week late.  Even then he needed some coaxing.  On that blessed, long awaited day almost 7 years ago my life changed. I became a mother.

One of my greatest joys in life is being a mother.  It is only now that I understand what it means to be a mother.

Sophia Loren said it best,

“When you are a mother, you are never really alone in your thoughts.

A mother always has to think twice, once for herself and once for her child.”

I was truly blessed with a wonderful mother and I am humbled to share the badge of motherhood with her.  Although I may not live in close enough proximity to make her these delicious pancakes I am dedicating this post to her.  She taught me what it was to be a mother.  I love you Mom!  You are an amazing woman!

With regards to cooking, I learned from my mother to have ripe bananas on hand for banana bread.  I love banana bread as much as the next person but if you have some ripe bananas sitting around the house this Mother’s Day give these Banana-Nut Pancakes a try!  Pair them with Nutella and they are out of this world!

I made these on Mother’s Day because I wanted something besides a plain pancake. I’m not a fan of Nutella so I did a different variation for the topping. I sprinkled with chopped pecans, butterscotch chips, and maple syrup. I guess it was a very unhealthy version but it was so yummy. This is a delicious recipe and all my kids loved it! Thank you for sharing this and your story :0)

    • I’m so glad you liked them and your version sounds delicious! Thank you so much for taking the time to leave a comment. It really means a lot to me that others are enjoying my recipes. I hope you continue to find recipes you like here!

I’m a frugal foodie too…looking forward to learning from you and sharing insights!

    • Thank you so much Kelly…love your blog too! The layout is awesome! I haven’t taken any classes for photography but I did have the opportunity to recently watch a photography workshop on with Penny de los Santos. I kinda learn as I go 🙂

  3. I love your site! As a college student who decided to get married and move to the opposite end of the country away from my family, I definitely have to make my food budget friendly!
These pancakes look amazing, too. I love the combination of bananas and nutella!

  4. I found this post and blog by accident today but I enjoyed your work. I will be checking back often. Thank you so much.

  5. I always just make regular pancakes! Maybe I should start doing different flavors! I’d love these!
