Chicken and Fettuccine with Spicy Peanut Butter Sauce

My family loves spaghetti and I am really happy with that for two reasons, actually three.  One, it’s cheap.  Two, it’s easy.  Three, I get to play sneaky vegetable elf by adding additional veggies to my sauce, shhh, don’t tell!  With pasta on sale often it is an obvious choice for budget meals and as much as I love to eat spaghetti, variety is the spice of life.  Plus, I don’t want to hear, “Spaghetti, again!?” from my kids.  I hear enough whining as it is…

To throw some variation into the mix I whipped up this Spicy Peanut Butter Sauce and mixed it with fettuccine, chicken, and vegetables.  It is sweet, savory, and spicy and oh, so good!  Now don’t worry if you think you are a sweet kinda peanut butter person.  I am an all around lover of anything sweet that has peanut butter in it and I totally loved this!  Give it a try…you’ll never know until you do!

I originally made this with the entire pound of pasta but it was way too much for my family of 2 adults and 3 kids (who only ate a little bit) so I just had some leftovers for lunch and am also experimenting with freezing it.  There is a good amount of veggies so 1/2 lb of pasta should be perfect with the amount of sauce this makes.

Chicken and Fettuccine with Spicy Peanut Sauce

  • 1/2 lb fettuccine noodles
  • 2 large chicken breasts, cut into 1″ slices
  • 1 red bell pepper, sliced
  • 2 carrots, halved and thinly sliced
  • 1/2 onion, sliced
  • 2 cups thinly sliced cabbage
  • Spicy Peanut Sauce
  • fresh cilantro, optional

Start by boiling water and cook the fettuccine noodles until al dente. Be sure to salt the boiling water before adding the pasta…it helps, trust me! While the pasta cooks preheat 1 tblsp canola oil in a large skillet over medium-high heat. Put the chicken in the preheated skillet and cook for a minute or two on each side. Season with salt and pepper. Add in all the vegetables except the cabbage. Turn down heat to medium-low while you mix up the Spicy Peanut Sauce.

Once the noodles are cooked drain and add to the meat and vegetables. Add in the cabbage. Pour the Spicy Peanut Sauce over top and toss everything to coat. Serve immediately with some fresh cilantro, if desired.

Spicy Peanut Sauce

  • 1/2 cup onion, finely chopped
  • 1 tsp garlic, minced
  • 1 tsp ground ginger
  • 3 tblsp canola oil
  • 1/2 jalapeño, seeded and finely chopped
  • 1/2 cup peanut butter
  • 1 cup water
  • 3 tblsp soy sauce
  • 1-2 tblsp honey
  • a couple dashes of red pepper flakes
  • salt and pepper

Preheat the oil in a large pan over medium-high heat. Add the onions and sauté until tender. Add the garlic and jalapeño. Season with a dash of salt and pepper. Allow to cook for another 2 minutes. Stir in ginger, peanut butter, water, soy sauce, and honey until smooth. Add the red pepper flakes, if desired.
