White Bean, Sun-Dried Tomato and Basil Hummus

I have a confession to make.  I have avoided hummus like the plague…until now.

I think the thought of mashed beans kinda freaked me out which is ridiculous since I love refried beans.

Or maybe it was the name.  Hummus.  Sounds like you are trying to clear your throat.

Well, whatever the reason I avoided it doesn’t really matter now because I love it.  It is quick, very inexpensive, and a great snack!  I’ve been making it all summer long to use on sandwich wraps, with veggies, or with chips.  The best part about a recipe like this is the fact that it is great for entertaining as well as lounging around the house or a quick lunch.

If you like hummus you need to try this version!

White Bean, Sun-Dried Tomato and Basil Hummus

  • 1 – 10 oz can white beans, drained and rinsed
  • 2 cloves of garlic
  • juice of half of a lemon
  • 2 tblsp sun-dried tomatoes, I used Trader Joe’s packed in oil
  • 10 basil leaves
  • a few tablespoons of extra virgin olive oil
  • salt and pepper to taste

In a food processor add the beans, garlic, and lemon juice, process until smooth.  Add the tomatoes, basil, and salt and pepper.  Pulse a few times until they are incorporated.  Turn on the processor and slowly pour in the oil until the mixture becomes smooth.  Store in the fridge in a sealed container or serve immediately with pita chips.
