Strawberry Lemonade Mojito {Mocktail}

I must say I am taking a little bit of liberty here and calling this a mojito.  It does have basic elements of a mojito (minus the alcohol) but honestly…I love saying mojito.  See, it’s fun!  Mojito.

With summer coming to an abrupt end I want to enjoy every last bit of it!  That means visiting our local splash pad, an upcoming day at an amusement park, and squeezing in a few bbq’s.  After a long day of frolicking outside there is nothing better than coming in and enjoying a tall glass of this Strawberry Lemonade Mojito Mocktail.


Strawberry Lemonade Mojito

This really couldn’t be simpler.  Mix the first 3 ingredients in a large pitcher.  Clean, hull, and slice the strawberries in half and place in a medium bowl.  Use a potato masher or a fork to gently mash the strawberries.  Add to the lemonade.  Chill until you are ready to serve.  Garnish with a lemon slice and a sprig of fresh mint.
