Roasted Corn on the Cob

Sometimes simple is good.

I believe that food doesn’t need to be elaborate or complicated to taste good.  All it takes are a few fresh ingredients.

Lately I have been making an effort to cook more cleanly by eliminating processed foods. It can be difficult but not impossible.  Believe it or not it is also very rewarding in more ways than one.

Buy fruits and vegetables in season and it can be very inexpensive.  It is also a very healthy lifestyle for you and your family which is something we should all strive for.  That being said, I am not a super anti-packaged food freak {and I say that in the nicest of ways}.  I think for every family there needs to be balance and I, for one, am not completely ignorant to the demands of family life.

As much as I would love to make homemade snacks for my children every day after school or have bread baking in the oven for every sandwich they eat it’s not gonna happen.  I would go crazy {oh wait, that’s already happened} if I tried.

The most recent clean eating recipe {well, not a recipe as much as a how to} that I have really enjoyed is roasting corn.  I swear I could eat this for dessert…seriously!  I love corn and my kids love corn, especially when it’s on the cob!  In the past I would boil it which is great but then you have to clean it and you get those little “hair” thingys {yes, I said “thingys”} all over you and it just takes a lot of time.

I gave roasting a try and I love it!  It’s much faster, those little hair thingys aren’t so much of an issue, and when you peel back the husk you have your own beautiful, and may I add, budget friendly handle.

Roasted Corn on the Cob

  • 1 ear of corn per person
  • butter
  • salt and pepper to taste
Preheat the oven to 350°.  Don’t worry about cleaning or shucking the corn, that’s what makes this so easy!  Place the corn onto the rack in the oven.  Bake for 30 minutes and allow to cool for a minute.  Peel back the husks, butter, and season with salt and pepper.  Use the peeled back husks as a handle.

  3. never thought of roasting it… we normally just grill it. Great for when the weather isn’t nice and I don’t want to get rained or snowed on while cooking!

    I ws going to put corn on the grill today. I took them out of the bag to find out they were moldy.

    Now the best I can do is stare at your beautiful photographs and wish!
