The Best Chocolate Chip Cookies

These ARE the best chocolate chip cookies ever…

but not for the reason you may think.  They do taste wonderful.  Soft, chewy, chocolatey.  But I love these cookies for one reason.

No planning ahead.

Ever had plans to make cookies but forgot to set the butter out to soften?  Or maybe you have a household of boys and one night they get the idea that they deserve cookies because they ate all their dinner.

Yeah, me too.  Well, they did eat all their dinner so it was only fair to reward myself them with their hearts desires.  I figured cookies were the least I could do.  These are my “Ooops, I forgot to take the butter out {again}” Chocolate Chip Cookies.

“Ooops, I forgot to take the butter out {again}” Chocolate Chip Cookies

  • 1/2 cup butter
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 3/4 tsp baking soda
  • 1 tsp salt
  • 2 1/4 – 2 1/2 cups all-purpose flour
  • 1 – 12 oz bag of semi-sweet chocolate chips

Preheat oven to 375°.  Line a cookie sheet with parchment paper {I used foil for no cleanup which worked fine}.

In a small saucepan melt the butter.  Pour into a large mixing bowl and allow to cool slightly.  Mix in the sugars, eggs, and vanilla.  In a separate bowl mix the dry ingredients and mix them into the wet ingredients.  Start with 2 1/4 cup flour but if the dough seems too greasy or thin add the extra 1/4 cup.  Stir in the chocolate chips.

Using a tablespoon measurement, scoop out the cookies onto a baking sheet about 1″ apart.  Bake for 12-14 minutes.

Yield: 3 1/2 dozen


  1. wow normally cookies with melted butter end up flat and over spread. these look like they are thick and chewy. Might have to keep this recipe on hand… I often forget to take the butter out!

    • LOL…I was hoping that would get people’s attention! I spent the first few years of my marriage looking for a recipe that wouldn’t flatten. This, plus a few other variations are very worn recipe cards!
