Elizabeth’s {ReadsRecipesRuns} Tortilla-Like Soup

I am so excited on BGM to introduce you to some other bloggers who have amazing talent.  When I sent a tweet requesting guest bloggers I was so excited when people actually responded back!  Elizabeth was one of those who did and I am so happy to feature her today!

As I type this it is snowing…okay, sleeting at my home in Utah.  I’d love to cozy up with a big bowl of her Tortilla-Like Soup!  What perfect timing, Elizabeth!

Hi there Budget Gourmet Mom readers! I am Elizabeth, and I blog over at reads recipes runs [www.readsrecipesruns.wordpress.com ] where I share my love of three things, reading, trying new recipes, and my journey to a half marathon. One way I stay budget [somewhat] gourmet is by stretching the most expensive items in my cart: animal protein. It’s much better for your wallet to use one chicken breast and get four to six servings out of it rather than one. One of my favorite ways to do that is to make

super flavorful soups like this tortilla-like soup recipe I have for you. (It’s tortilla-like because I don’t add any tortillas in it, but it’s very similar to what you would find at a number of restaurants when you order tortilla soup. Feel free to add some crushed chips or make your own tortilla strips in the oven to add some crunch.)

Alternate cooking method: Fan of the slow cooker? I sure am!! Add the onion, jalapeno, spices, chicken, and broth to the slow cooker and cook on low for about 4 hours (no need to saute, it will all be soft and yummy in no time). Then follow the rest of the recipe as is, just be sure that the beans and corn warm through.

    I’ve made a similar recipe before, it is sooo good! Definitely one of my favorites. With my leftovers I like to make a Baked Spaghetti. Throw in the soup (minus liquid) with spaghetti and cubed Velveeta Cheese and bake. Yum!
