Bean and Butternut Squash Chili {Guest Post}

I have been a busy little bee these last couple of weeks and with Christmas only weeks away it’s only going to get busier.

To be honest, I thrive on busyness.  And Diet Coke.  Lots and lots of Diet Coke.

Once the Thanksgiving leftovers are gone I’m back to planning dinner around our hectic schedules.  Honestly, I only have 2 kids in school right now.  Can you imagine what it’s going to be like when I have all 4!?  Help ME!

No matter how many kids I have in school or what things are happening on a particular day I have learned to depend on my slow cooker to do some of the work for me.  Kinda like those vacuums you can turn on, leave the house, and come home to a sparkling clean floor.  Do those really work and is there also a machine that folds laundry?  Hmmm.  Inquiring minds want to know.

  2. Yeah, the slow cooker is the best. I have a very basic one and it works wonders…when I use it…

    What a wonderful chili this is. I love the bean and butternut squash combination and the photo is beautiful with the avacado on top!

  3. Now this is my kind of chili! My husband turns his nose up and nearly anything veggie, but if it has the word chili in it he will usually go for it. I’m going to check this out. Congrats on the Top 9, and if you come across that laundry folder please send the tip my way!!

  4. Wow, this looks fantastic! I’ve been looking for a good vegetarian chili recipe, and I may have to try this one soon! I love butternut squash, so this can only be a win.
