Fresh Mint & Chocolate Chickpea Cookie Balls {Vegan}


If you’ve been reading BGM for awhile you know that we raise our own beef.  If you haven’t been reading well, now you know!  I guess you could say our diet is far from vegan but this girl makes vegan look good {even to this cow lovin’ farmgirl}!

hello! I’m Kristina, and I develop recipes and write for my website, spabettie. I love to cook all kinds of food, and being vegetarian, most of my focus is vegan and gluten free.

I am honored to be asked by Krista to guest post here, and I have brought one of my favorite things to share – chickpeas!

For this flavor, I looked for mint chocolate chips, and could not find any that were vegan, or without dairy. I do have readily available fresh mint, however. I was happy with the result.

vegan, gluten free, dairy free, refined sugar free

1 can chickpeas, rinsed and peeled
2/3 cup peanut butter
1 tablespoon flour (I used peanut flour!)
3 tablespoons maple syrup
water as needed
1 dark chocolate bar, chopped (or 1 cup chocolate chips)
4-5 fresh mint leaves, chopped or ripped

Peel chickpeas. I know this takes some time, but in my opinion, well worth it. I have forgotten in the past and the consistency is different.

In food processor or blender, puree chickpeas alone. Add peanut butter, flour and maple syrup, blend. It should form a ball of dough, if it is still crumbly, add a tiny amount of water, a teaspoon at a time. Process – it should quickly form a dough ball.

Stirring by hand, add chocolate and mint. Form into 1-inch balls. Bake at 350 for 10-12 minutes.

You have to eat one warm from the oven. Melty chocolatey minty delicious.

The original chocolate chip flavor tastes fabulous as is. The mint flavor adds a layer of freshness that any mint-chocolate fan will love. The nutritional stats aren’t too shabby either (for two cookies). Look at that fiber!
