Healthified Waffle Bowl Sundae

I need to consider enrolling in kickboxing.

So, I’m driving home the other day after spending an hour at the doctor with a feverish, irritable little squirt (that’s his nickname so that is a term of endearment not at all a complaint about his behavior) and another 30 minutes at the pharmacy waiting for his prescriptions.

An hour and a half later I have an even more irritable baby with an ear infection and no prescriptions.  That’s because the new insurance card I just tried to use to pay for the prescriptions is apparently inactive.

Well that’s news to me since we’ve had the same insurance for the past couple years and as far as I know mr still has a job.  With the same company.  He’s been with for 15 years.  The guy on the other end of the phone was less than helpful and I could have climbed right through the phone and slugged him in the face.

This is why I need to take up kickboxing.  I am quite sure I could have burned about 1000 calories after that morning.  I did have a little mama bear coming through.  Rawr.  Or Grrr.

Fortunately for that creep there was a phone in between us.  Fortunately for me I had whipping cream in my fridge.  Instead of kickboxing I took my fury out on that.  And boy was it good.

I used this dandy new OXO Good Grips Egg Beater.  OXO graciously sent one to me to try out.  I’ve used it to mix batters, beat up a mean scrambled egg, and, of course, whip up a small batch of whipped cream in about 30 seconds.  Did I mention I was mad…it might take you 15 seconds longer.

  9. I go with lower-fat (not fat-free. Like Low-fat cheese and low fat cream cheeses in a recipe. This retains some of the flavor and still decreases the fat significantly. I also use Butter Buds.

  30. I use coconut oil for all recipes needing oil or even recipes that call for shortening when the coconut oil is in a solid state. Coconut is great for the thyroid and helps boost metabolism. It has many other great qualities. I even use the virgin coconut oil as a skin moisturizer and wrinkle cream!

    Real heavy whipping cream!!! Actually the fresh cream is my favorite, but since I don’t live on a farm or anywhere near a dairy, I settle for the heavy whipping cream. Non of that frozen whipped stuff for my family!!!

  47. So sorry about your baby’s ear infection! This waffle bowl sunday sure looks great! Honestly, I’m not a low fat/ low cal kinda gal, I simply believe in eating unprocessed, whole foods! But I love my butter, cheese, and heavy cream… that’s for sure!

  85. I use many of the hints already mentioned. ie: applesauce, low fat yogurt

  86. I’m a fan of using plain non-fat yogurt instead of sour cream. Same great tangy taste without all the fat and calories.

    I use canned pumpkin in place of oil and eggs in cake recipes. It makes them light and really moist too!

    I use baby food prunes or applesauce in place of much of the fat in some baking …. a jar of stewed, mashed prunes makes a loaf of orange craisin bread taste YUMMY & cuts the fat & calorie content by a ton!

    • Ha! I haven’t felt the need to kickbox anyone lately…thank goodness! As far as the healthier part, instead of filling a waffle bowl with ice cream and syrup I wanted to show people that you could top yogurt with some fresh fruit for a yummy dessert. It’s one of my favorites!
