Healthy and Hearty Orzo Salad

“There’s a party in my tummy.  So yummy, so yummy!”

If you have kids you may have heard that song from the show Yo Gabba Gabba and right about now it’s repeating over. And over.  And over in your head.

Well, there’s a party in my tummy.  So yummy, so yummy.  Wanna meet the guests?

The star of the evening is orzo.  Pasta is always the star in my book.  I’m addicted.  I wish I was addicted to loading my plate with carrots and broccoli and all sorts of fruits and vegetables but I would take a huge bowl of pasta over veggies any day.

Our little friend orzo is a small, rice shaped pasta.  I seriously love this stuff.  I don’t know what makes it different from other noodles but it is.  It’s wonderful.

Since pasta is easy to get into my belly and veggies not so much I played a little game on my head. I’m the one who cooked it and I even knew the game I was playing but somehow it worked. I have no idea how.

There was just enough orzo to give me a slight carb coma and more than enough veggies to make feel like a super star.

  2. I’m an orzo addict, too! I love how slippery it is in my mouth. So comforting and easy to eat.
    I love it in a rich chicken broth with lemon zest, Parmesan and fresh parsley.

  8. Thanks for the recipe – I found it on Pinterest! I added red peppers, lots more spinach and a little splash of agave (just to sweeten it up a bit). I didn’t like it warm but it was delicious after sitting in the fridge for a bit. This would be good with a little cheese/spinach tortellini too!
