Pizza Stuffed Jalapeño Poppers

Do you know how fast 15 minutes goes by?

I do.  It’s fast.

Every 15 minutes on Monday I had to put drops in mr’s eyes because he got LASIK surgery done.  I’m not jealous even though I’m stuck wearing glasses the rest of my life.  Not at all.  Apparently my eyes are just bad enough that I need to wear glasses when I drive or watch t.v. but not bad enough for surgery.  Dang.

So this went in for a few hours.  Drops.  Set timer.  Beep.  Drops.  Set timer.  Drop.   Beep.

After awhile we reread the instructions which said we only needed to use these drops every 15 minutes for the first 3 hours.  It had been 7 hours.  Sigh.

Don’t say anything but I kinda have a crush on him so I didn’t mind.

So it’s true that 15 minutes isn’t much time but in that amount of time you could easily whip these spicy little bites up.  They have cheese in them too.  I’ve mentioned my cheese addiction right!?

Good, because you are going to hear a lot more about it in the  coming weeks.

  1. Mmmm cheesy jalapeno poppers. Would love a few of these 🙂

  2. I love jalapeno poppers of ANY kind. these look DEEEELICIOUS.

oh, wow, for seven hours when it only needed to be three? 🙂 I was imagining you actually trying to make these, and getting interrupted… and getting interrupted… and… 😉

    • Thanks Kris! Oh my goodness. The standing, then the sitting, then standing again. It was worse than having a newborn! We had a good chuckle when we realized our mistake. It was pretty hilarious!

  3. Seriously in love with these. Especially that ricotta!!

  4. these cheesy jalapeno would be a hit this weekend!

    • Yes they would! This is the first time I made poppers and I am in love! So easy, a bit spicy which means I won’t eat a lot which means I can still zip my jeans, and mr gets a dose of the heat he loves. Win-win!

  5. If I didn’t have an unreasonable fear of jalapenos. I would so try to make this (without pepperoni at least).

    • I made the mistake of taking a bite thinking it wouldn’t be so bad since there weren’t any seeds. yeah. I was wrong. Mr was happy that he got to enjoy them all.

  6. These look really interesting and delicious! I love filling up jalapenos with non-traditional fillings. We actually just posted a recipe on our blog that is similar in appearance, but with a very different taste. I plan on trying this version as soon as possible!

    • Awesome Seth, thanks! Isn’t it fun to play around with ingredients and make different versions of a traditional recipe? I live for tweaking recipes!

  7. Who doesn’t like Jalapeno poppers! These look great for a superbowl party.
