Blackened Chicken with Avocado Citrus Salsa

I simply do not have time to think about dinner lately.

Ever since the middle of January my life has been utter chaos.  Organized chaos but chaos none the less.

It was evident when I was chatting with a very good friend the other day, she paused, and said, “Is that backwards?”

“Is what backwards?”

“Your sweater?  I think it’s inside out”

Within seconds of looking down  I discovered that indeed my sweater was on inside out.  And I had just come from helping in my sons class.  All.  Morning.  Long.

Oh joy.

No.  I’m not crazy.  *twitch twitch*

I’m just testing how much caffeine is required to keep oneself awake for as long as humanly possible so they can get done as much as humanly possible in a short span of 24 hours.

Someone get me those caffeine patches on Meet the Robinson’s so I can stay awake for days.  I already have random fits of uncontrollable screaming…what side effects?

Anywho…since I’m so wrapped up in my experiment {which is completely fake by the way} and the simple task of getting myself dressed in the morning is apparently too difficult simple dinners are good.

And entirely all too necessary at this point.

Enter Blackened Chicken.

Chicken, meet spices.

Spices, meet chicken.

See.  They love each other already.

  1. Dinner has been problematic for me too. Although somehow I had made more time for breakfasts other than cereal. This chicken looks so good though!

    • Thanks Erin! I am a total breakfast person too! The end of the day rolls around and I am just done. Now, if dinner were at the beginning of the day that would be easier.

  2. I love your blog! I’ve given you the Liebster Blog Award! You can find it here…

  3. Hi Krista – We met at the fb conference in San Fran in Nov. So sorry its taken forever to pop in & say hello! You have such a wonderful place here and I am so glad I stopped by 🙂

  4. Hey, at least you are managing to get dressed, right? I’m lucky if I get out of my pjs! This looks absolutely fabulous – it’s making me hungry!!

  5. Everything looks so delish, Krista! Off to pin it 🙂 have a great weekend 🙂

  6. Looks very delicious. Love it 🙂

  7. Too funny! I have also wondered into public with my shirt inside-out. Of course, it was the time that I ran into about 5 people I knew. This quick chicken dish is perfect for those of us whose minds are otherwise occupied.

  8. you had me at blackened and everything else was a drool fest! Looks delicious!

  9. This looks awesome. I’m so glad you suggested making your own spice rub, because seriously, the bottled stuff just doesn’t compare! This looks delicious.

    • Thank you Jessy! I love making my own spice rubs. Mr actually won a set of really nice spice racks two years in a row at a golf tournament when we first got married so we started off with lots I could experiment with.
