Meatloaf with Scalloped Potatoes

A few things have been made abundantly clear to me in the last couple of days.

One, naps are one of the most awesome things on this planet.

Two, over worked moms {very redundant} need awesome things in their life.

Three, I need more naps and less work.

Four {this is last one, I swear}, meatloaf is, by far, the least photogenic food I have ever seen.  Don’t even try to argue with me.  It’s true.

Despite it’s very unphotogenic nature meatloaf will always have a special place in my heart.  It reminds me of my grandma and as much as I love quick and easy meals there are times when a cozy, slow cooked meal is just the ticket.

Grandma’s seem to know how to do that best.

I can remember weekend gatherings when she would make this meal.  Us kids would always have to eat it with ketchup.  Hey, I still need my ketchup.  It’s tradition.

The house would smell amazing, just like my house smelled the other night.  Family would be all around, catching up, playing games, and the “dads” watching sports.  Fun, fun memories.

Oh, what I wouldn’t give to go back to that time, if only for a nap.

  1. I’m a huge fan of this meal. I have always loved meatloaf and have been craving it lately. This one is classic!

  2. Ok, I’m totally craving the potatoes right now…guess we will be having them for dinner 2nite!
