Asparagus and Mushroom Frittata

You will not believe how fast this is to make!

Mr is a protein for breakfast kinda guy.  I’ve discovered, since being married to him, that I guess I’m kinda a protein for breakfast kinda person too.  Not in a “Runaway Bride I don’t know what kind of eggs I like” kinda way but in a “good kick start to the  day” kinda way.

The other week I had some leftover roasted asparagus and some mushrooms from my trip to Trader Joe’s in California.  I also had a block of Redwood Hill Farm Raw Milk Feta.

It didn’t take long for me to determine that these three ingredients needed to be combined into one fabulous dish.

The faster the better.

Of course, I am just getting around to actually writing about this because of my bout with the cold virus from heck.  For the past week my cooking has consisted of toast, PB & J sandwiches, and the occasional scrambled egg.

Would you be surprised if I said this frittata was almost as easy as scrambled eggs?  It is.  And if you have leftover veggies it is that much faster.

Did someone say breakfast for dinner?

This post was sponsored by Redwood Hill Farm.  They sent me some of their fabulous cheeses to sample however, they have not paid me to say their cheese rocks.  It just does.  The end.

  1. I love using leftover ingredients for breakfast. And a fast meal is always a plus in my book!

  2. I love the vegetable combo of mushrooms and asparagus with feta for this frittata dish! And yeah, breakfast for dinner is awesome!

  3. I so wish I would have had this for breakfast this morning! Sounds fabulous!!

  4. Found you through FoodBuzz. So glad I did, we’re a family of 5 (6 every other week) and because I’m mobility disabled with arthritis at 30, I live off welfare here in the UK which somewhat restricts the budget, of course.

Your recipes are just awesome. So nice to have found you.
