You will not believe how fast this is to make!
Mr is a protein for breakfast kinda guy. I’ve discovered, since being married to him, that I guess I’m kinda a protein for breakfast kinda person too. Not in a “Runaway Bride I don’t know what kind of eggs I like” kinda way but in a “good kick start to the day” kinda way.
It didn’t take long for me to determine that these three ingredients needed to be combined into one fabulous dish.
The faster the better.
Of course, I am just getting around to actually writing about this because of my bout with the cold virus from heck. For the past week my cooking has consisted of toast, PB & J sandwiches, and the occasional scrambled egg.
Would you be surprised if I said this frittata was almost as easy as scrambled eggs? It is. And if you have leftover veggies it is that much faster.
