Double Blueberry Waffles {A Guest Post}

Spring has officially sprung and that means berries!

The fresh berries are still not as cheap as I would like so instead they sit on the grocery shelves taunting me.

Eat me.  You know you want to.  I’m not really that expensive.

Fortunately for me I have awesome parents and they were visiting last week for my son’s birthday {which turned out great despite the fact that I was sick}.  They brought with them a carton of fresh blueberries and fresh strawberries.

Oh. My. Goodness.

I could almost stand it if they visited every weekend as long as they brought fresh berries with them every time.  Which, during the summer, they do.

Since my son’s birthday was on Friday and we had the typical morning rush to school to contend with I promised that I would make him a special breakfast for Saturday.  As promised, Saturday morning, I drug myself to the kitchen to whip up a batch of these double blueberry waffles.  I made sure to make a double batch so I could freeze them for a fast breakfast or dinner.  Soccer season has officially started so I have a feeling they will come in handy.

I’m sharing my recipe for these waffles over at Confessions of a Recipe Junkie today!  If the blueberries didn’t entice you go over then go and get acquainted with Michelle.  She is such a doll!
