Open Face Italian Egg Sandwiches

Every first weekend of the month I get the house all to myself.

To say it’s something I look forward to is the understatement of the century.  Usually I make a list of a dozen things I’d like to get done in the two hours I have to myself.  Sometimes I get one done.  Other times I just make breakfast and actually get to eat it.  Life changing I tell ya.

I saw a version of this little sandwich years ago on an episode of Giada.  My initial reaction was tomato sauce and eggs?  No thanks.  Then, by some amazing turn of events I made it.  Instant love.

So can you guess what I did last Saturday while the kids were away?

Unchecked checklist: only for breakfast.  Full tummy and a quiet house: priceless.

I’m not saying you have to save this just for the weekend!  Celebrate Monday.  It only takes 10 minutes.
