My wonderful father had 2 daughters.
Two Barbie lovin’, finger nail paintin’, outdoor potty hatin’ girls. He loved camping. And fishing. And hiking. And biking. And pretty much anything involving dirt.
Every summer we would pack up the car and hit the road. You know, there are only so many Barbie’s you can pack into one car and still have room for food. Finger nail polish, although completely necessary in my book, was not considered to be an essential.
And the outdoor potties.
Well, after one particularly terrible camping trip where my sister and I practically refused to go to the bathroom he made sure that future campgrounds had running water. Probably more for his own sanity than our delicate bladders.
Despite all the hilarious antics that would inevitably ensue with two prissy little girls we did have lots of fun. One of my fondest memories is being stuck in the tent during a camping trip on our way to Canada I think. It rained ALL day. My sister and I happily snuggled into the tent, Barbie’s were played, coloring books were made into works of art, and we cooked inside.
There aren’t too many things you can make inside a tent. We actually had a vestibule where we had our shoes and an ice chest and our little Coleman gas stove.
We fired up that baby for a minute to make bologna and grilled cheese sandwiches. Seriously, don’t knock it til ya try it.
On that wet and cold day it was just the kind of comfort food we needed.
I hadn’t even thought of this camping trip nor made these sandwiches for years until I was reminded of it the other day. I know we could make those trips rather miserable sometimes but we sure did have some fun!
