White Bean and Tomato Manicotti – From Freezer to Plate in Minutes

I’m a simple girl really.

As in if it’s simple then it’s for me.

Our family is in the midst of summer and despite summer having the reputation of being laid back and easy going ours has been anything but that.  I guess I should correct that.  The kids are enjoying that laid back freedom but Mom and Dad still have work and all the other responsibilities that being an adult brings.  Oh, to be a kid again.

Since having the power to choose to eat cake for breakfast is kinda something I enjoy I’ll just watch my kids live it up during their laid back summers while I devise a plan to make mine a bit less hectic.

Preparing food ahead of time and freezing it is one of those things that has saved my rear more than once.  I love to make big batches of my chili, sloppy joes, and meatballs to have in the freezer for last minute dinners.

I also love to have single serving meals for those times when I need to eat on the run and a PB&J sandwich just ain’t gonna cut it.  In the past when I would make these meals I would put them in a plastic container then reheat them.  I have to say that I’ve dropped those containers a number of times and they would shatter on contact because they were frozen.  Oh my goodness was that annoying.

  1. OOhh!! I love the addition of the beans!! I’ve never had that before, but I bet it’s fabulous. We are not into summer yet… school’s not out and the weather has been anything but summerish. It’s coming though!!
