Mountain Man Steak and Egg Burrito

Last year I waxed poetic about my mom for Mother’s Day.

Dad got a recipe roundup.

I think it’s safe to say Dad’s just get overlooked sometimes.  Think about it.  When you call home who do you want to talk to?  Mom.

Dad will answer the phone and I’ll ask, “Is Mom there?”  Without fail.

Who is the one you come crying to when a boy breaks your heart or you skin your knee?  Mom.

And let’s not even bring up shopping.  That one is Mom…hands down.  Unless of course it’s for a new fly fishing rod.  Then my Dad is your man.

Although there is that tendency to overlook Dad they are never far from our minds.  In fact, the other day I was totally channeling my Dad when I was scolding the kids for something that I can’t recall now.  All I know is I heard that little voice in my head go off saying, “Oh my gosh.  I sound just like my Dad.”

Not a bad thing since I think I turned out pretty good.  He must have done something right.

He did a lot of things right and I’m grateful for it.

Although, there was this one time I remember going on a hike during one of our many camping vacations.  My parents were super obsessed with plant species at the time.  They would carry around these huge encyclopedias of local wildlife and plants.  Longest.  Hike.  Ever.

Obviously I am scarred for life but those are the kinds of experiences I cherish now.  And I look forward to my kid’s learning everything there is to know about Queen Anne’s Lace and how it only grows in the shade.  {I just made that up – FYI}

They absolutely love playing with Grandpa and I absolutely love watching them.

Our relationship has come full circle and it’s safe to say I have a greater appreciation for the wonderful he was and still is.  Which is why I made a breakfast burrito inspired by him.

He is quite the outdoors-man and as a result is one of the best dutch oven cooks this side of the Mississippi.  Just sayin’.  He makes this breakfast called the Mountain Man breakfast.  Eggs, hashbrowns, sausage, cheese.  Good night.

In honor of my Dad and my husband this burrito is a little fusion of mountain man and moo-cow man.  That was a stretch, wasn’t it?  Yeah.  I felt it.

Whether Dad loves the outdoors or likes to play cowboy every man loves a hearty breakfast.  Happy Father’s Day to all you Dads!
