Whole Wheat Peanut Butter and Jelly Pockets

So guess what?  I’m kinda a geek for anything doughy that happens to have a gooey center.

I mean it’s a no brainer right!?

For one I’m a total carb-o-holic.  Two, the fillings are endless.  END. LESS.

A year ago I posted these breakfast pocket.  They kinda got popular and since the entire family loved them I thought it was time to give this little guy a makeover or at least a sibling.  The original does have it’s star qualities.

Meet the Breakfast Pocket’s sister, Whole Wheat Peanut Butter and Jelly Pocket.

She’s a portable little lunch that also enjoys being devoured at breakfast, snack time, or dinner.  She is made with a whole wheat dough for added nutrition and filled with a classic scoop of peanut butter and jelly.  You can’t go wrong!

Now in the past I’ve had a difficult time working with whole wheat flour.  Is it just me or does some whole wheat flour look like ground up cardboard?  I’m not naming any names but let’s just say I’ve become rather picky with my flour which is why I was thrilled to connect with Bob’s Red Mill.

They have a fabulous array of products, many of which I can buy at my local store.  I bet you can guess one product that is becoming a favorite of mine.  You can bake with it, it doesn’t look the least bit like cardboard, and it makes the most wonderful whole wheat dough.  Yup.  Their whole wheat flour passed my test and I’m kinda in love.

And I think my kids are too since I’ve already made three batches of these pockets and I still can’t seem to keep them in stock.
