Zucchini Brownies

Believe it or not we still have zucchini growing in our garden.

I remember when I said I was excited for all the zucchini my little plants were sure to produce.  Well, would it be ungrateful for me to say I’m so done with the zucchini at this point?  There’s only so much a girl can take.

There is one benefit to all of this though.  We have had sauteed zucchini and corn almost once a week and the other night that’s all Little Squirt would eat.  And we had barbecued steak.  Who is this child and where did mine go!?

So we have reached a point when zucchini must go into everything.  Pasta.  Pizza.  And now brownies.

Oh my goodness folks.  These brownies.  I’m getting hot and bothered just thinking about them.

Just sweet enough.  Fudgy and moist.  And probably healthy.  After all you are getting a good helping of veggies in each square.

And now I find myself with one teensy little problem.  I need more zucchini.

    • If I was limited to only one thing to plant each year it would be zucchini. Although I do love our tomatoes. Okay, two things. I can only plant two things.

  11. I just made these and they are just ok. Mine didn’t turn out as dark as the ones in the picture. I will definitely make these again but I will increase the cocoa (maybe to 1/3 cup cocoa) and I might try adding in chocolate chips. They don’t taste bad, just bland.

    • Oh, I’m sorry they didn’t out very tasty Erika. I think the addition of the chocolate chips would be fantastic! I did make another batch of these at the end of the summer and, I will say this, the zucchini plays a huge part in the way the brownies turn out. My second batch wasn’t quite as fudgy as the first. I sure hope the next batch turns out better for you!

      • They were still moist. Instead of calling them brownies I called them zucchini bars and I put cream cheese frosting on top and they were a hit! I wonder if mine turned out differently because I used frozen zucchini. They were still good, just not very chocolatey but the cream cheese frosting made them perfect. Thanks for the recipe.

  12. I just made these and they seem to taste a little bitter from the baking soda. Is that normal?

    • Hmmm. I don’t think so and no, thats not normal. It could possibly be from the zucchini. That’s the only ingredient that could cause a variable in taste, color, and consistency. Bummer!

      • Ok I was kind of thinking it might be from not mixing the baking soda in enough. Next time I’ll mix the baking soda with a little milk and add it in last. It’s not a very strong bitter taste. I just put some frosting on them and they are still really good 🙂 thanks for sharing the recipe.

  13. Just made these. I used frozen zucchini. It turned more cake like then fudge brownie type. Still yummy. Making chocolate frosting to add a little more yummy to it! I wonder if its because of the frozen zuc?

    Made these tonight. Used half whole wheat flour and applesauce instead of the oil. Came out moist and delicious. Definitely more cake like than brownie, but no complaints from my family. Thanks for the great recipe!
