McCormick’s Garlic Lime Chicken Fajitas

My neighbor asked me the other day, “So, since you have a food blog do you eat really well or not?”

I knew exactly what he was asking and mr and I answered in unison, “YES.”  The answer is yes to both.  There are days when we do eat really well.  Most days, in fact.  Then there are days when I’m running around like a chicken with it’s head cut off and by the time 6:00 pm rolls around I can barely write my name let alone operate heavy machinery that could cause a fire in my house.  It’s times like those that we usually order something.

I do have a few recipes that are great for a last minute meal but you can only eat so many bean burritos or breakfast for dinner before it gets to be a bit too much.  That’s why I am so excited with the new herb and spice packets McCormick has come up with!

I’ve seen them in the store but had never tried them before now.  I don’t know what I was waiting for!

Having to live on a budget has taught me to be pretty frugal so I probably thought, “I don’t want to spend an extra $1 just for a packet.  I have those spices at home already so I won’t bother.”

So instead, I call my neighbor who happens to own a Chinese restaurant {luckeeee} for takeout and spend $20.  Ummmm, so I don’t spend the extra $1 at the store but toss twenty bucks towards Chinese take out?  Now I’m not saying I won’t be ordering take out ever again because I will but I have changed my way of thinking a bit.

It’s definitely worth the extra $1 and the peace of mind knowing I’ve got a plan.  There is really no thinking involved.  The recipe is right on the packet along with every spice you need to add flavor to your dish.

There are some days when I love whipping up my own creations, but then there are the days when I just need something simple, delicious, and wholesome for my family.  No thinking involved.  Just a great dinner in under 30 minutes.

You can find this recipe on the recipe card attached with the seasoning packet.  It does suggest you marinade the chicken for at least 30 minutes but if you are in a rush you can toss it together and cook it.  If you do have some time to spare though, I suggest marinading it.

  3. I do have a basket full of packaged spices! As much as I love from scratch meals, having young children makes it so that is not always the easiest. These look amazing!
