Citrus Sweet Potato Sauté

I’ve always been a fan of sweet potatoes.  Not yams.  Sweet. Potatoes.

You know those things marked “yams” in the grocery store?  They’re actually sweet potatoes.  Those beautiful purple potatoes with orange flesh or meat or whatever.  Those lovely things you bake up every year with marshmallows.

Do me a favor…actually two.

One. Call them sweet potatoes.  That is what they are.  Yams are a completely different story and, as far as I know, don’t grow here in the beautiful US of A.  I could be wrong about that so don’t quote me.

Two. Do Not bake these with marshmallows.  I may get a little grief from that but I’ve never been able to jump on the sweet potato casserole or candied “yams” boat.  Dessert with vegetables…yes.  Just not in this form.

Since I believe that sweet potatoes are an important part of many Thanksgiving traditions I wanted to offer an alternative.  My Citrus Sweet Potato Sauté is still sweet.  It may be lacking in puffy goodness but if you miss the marshmallows that much I give you permission to throw a few in.  Just a handful.

    • Yay! Thanks Kalyn! It absolutely drives me nuts when I see the wrong signage. It just confuses people when you tell them to use sweet potatoes in a recipe and they don’t know what they are.
