Saffron Rice with Golden Raisins and Pine Nuts

As a young child my mother was always very good about introducing us to new foods.  I remember her pouring through magazines and cookbooks for new recipes she could make.

As a mother and a food blogger I try to follow in my mother’s foots steps but I always seem to have a tough time with Middle Eastern cuisine.  It is a combination of flavors that I am not completely familiar with so I usually leave it to the professionals at my favorite restaurants.

Little did I know how easy it would be to embrace and create dishes primarily with what was already in my pantry.  I absolutely love this recipe for Saffron Rice with Golden Raisins and Pine Nuts that my friend and fellow food blogger, Faith, shared with me.  It’s just one of over 100 recipes in her new book, An Edible Mosaic: Middle Eastern Fare with Extraordinary Flair by Faith Gorsky, that just became available for purchase on Amazon and Barnes & Noble.

Faith had the opportunity to live in the Middle East after she was married which makes her vast knowledge of the cuisine a treasure.  Most of the recipes in her book focus on dishes from the Levant with a few other areas of the Middle East included.  What a fabulous cookbook to have in your repertoire!  It’s like making your own take out but being able to eat it in your pajamas without getting weird glances from other patrons.  Not that I’m speaking from experience.

On a side note, I also think this would make a fabulous side dish for Thanksgiving.  A bit untraditional, perhaps, but all the makings of a wonderful new tradition.  Especially considering the recipes in her book were taught to Faith mostly by her mother-in-law, Sahar.  I love when family comes together in the kitchen.

    And I’m so glad you enjoyed the rice!! I actually LOVE your idea of using it as a Thanksgiving side…and I think I might just do that because Mike always asks for rice on Thanksgiving with his turkey (he doesn’t eat mashed potatoes, lol). 🙂
