I’m not sure I can remember a winter in Utah that has been as cold as this one.  That’s what I’m blaming my laziness on at least.  By the end of the day my energy is sapped and my flannel pj’s are looking more and more inviting with each passing second.

During times like these I reach for tried and true recipes, the more versatile and family friendly the better.  When I found this recipe for Chicken Chili with White Beans I knew it would fit our budget, lifestyle, and our tastes.

I love chili recipes for their versatility.  You can whip them up in minutes or allow them to simmer in a slow cooker while you are away at work.  The same goes for this recipe.  Whether you are looking for a quick 30 minute meal or planning to prep dinner in the morning, this Chicken Chili is it!
