I often look back on my childhood with a longing to go back.  Revisit some of those care free days when, as a child, most everything is done for you.  Your main worry is to go to school, a few chores, and not to fight with your sibling too much.  At least that’s what mine consisted of most of the time.  As a parent I have discovered a true appreciation for my parents and family and the blessings I had growing up.

When I have moments to show those closest to me how much I love and appreciate them I jump at the chance.  About a month ago I spent two weeks in California with my family.  I had a whole week by myself there where I was just me.  Not mom, wife, or even blogger.  I was a daughter, sister, granddaughter, and niece.  They are roles I don’t often get a chance to fulfill all on their own as I am usually juggling the mom and wife and blogger roles at the same time.

It was such a blessing to spend time with my family and before the boys and mr left to return to Utah we had a nice family dinner at my grandparent’s house.  That was the usual scene years ago when all of us cousins were young.  It was a night of good eats and a few treats including this Samoa Trifle.

My Grandma happens to have diabetes so when I’m planning a menu I always keep that in mind, especially when it comes to dessert.  Dessert is, after all, the perfect way to end a party.  As it is with most people I know, my Grandma has quite the weakness for girl scout cookies {who could blame her} and her favorite happens to be Samoas.  And now I know where I get my good taste from.

I kept that in mind when constructing this dessert.  It’s all the flavors of samoas without all the sugar.
