Wanna know a secret?  Come closer and I’ll whisper it in your ear.  A little closer.  A liiiiittle closer.  Okay.  Ya ready?  It’s a doozy.

I don’t like root beer floats.

I’ve never liked root beer floats.  I have tried and tried and tried to like them only to give up after a few sips resigning myself to be a root beer float hatin’ freak.  I do like cheesecake though.  I looooove cheesecake.  So much so that I decided to combine my love of cheesecake with my dislike of root beer floats.

Apparently my love of cheesecake is so strong it cancels out my lack of excitement for root beer floats.  These bars are the perfect way to say goodbye to summer this weekend.  I will warn you, they aren’t super duper root beer-y cuz that’s the way uh-huh uh-huh I like it.  Maybe add a bit more extract if you are a root beer lovin’ party-er.

  10. this may be a silly question but..what is “1 -.25 oz box gelatin”? A box of gelatin is 6oz …is that a negative sign before the .25? I’m trying to make this but I’m not sure about the measurements. Thanks!

    • I actually wrote it that way so it was more clear the recipe called for just 1 box of gelatin that approximated .25 oz per the companies calculations.
      The box of gelatin I used was specifically made to be flavored with soda however, I have no doubt you could use a packet of unflavored gelatin (such as Knox brand) for the same result. Enjoy!

  12. There’s actually a tiny little decimal in front of the 25. It happened to be a box of gelatin made specifically for soda. I have no doubt you could replace it with a packet of unflavored gelatin (such as Knox brand) for the same result. Hope you like it!
