Today would have been my Auntie L’s birthday.  And in true Laurie fashion I’ve been thinking about worrying about this pie for days.  I wanted it to be perfect.  Not too pudding-y or too dense and rich.  A perfect combination of both.

Marie Callenders Chocolate Satin Pie happened to be my Auntie L’s favorite pie.  With good reason.  She and I got along great.  Both Diet Coke drinking, chocolate eating fools.  In fact, she made the best peanut butter cookies, always with a chocolate kiss.  She truly loved life, the good and the bad.  With her passing (and that of my Grandpa’s) I’ve been on somewhat of a sentimental journey lately and it’s translating into the food I make.

This pie is my own personal tribute to her on this special day.  So I researched and looked up page after page of chocolate silk pies and chocolate cream pies.  Some were baked, some were just custard, while others were a bit of both but nothing that I truly thought was worthy of making.  I have no doubt they each would be fabulous in their own right but not for my Aunt.  I wanted this one to be truly special.

I got to work in the kitchen concocting this chocolate satin pie.  A perfect blend of light, airy, and decadent chocolate filling.  Even if it’s just special from the love and effort I put into it that’s okay with me.  Happy Birthday Auntie L.  I miss you more than words can say.
