Cucumber and Onion Salad

I am loving all of the fresh produce right now!

I am especially enjoying the cucumbers I am finding at our local store.  Girls, these are not just for baggy eyes…although, after the 3 week vacation I just had I may need some!  I am looking rather ragged after all the fun and now, cleaning and unpacking that is ahead of me.

Besides looking a bit ragged I am also extremely short on time these days.  With the weather being hot I depend on quick recipes that come together in minutes and don’t require any cooking.  This cucumber and onion salad is one of our favorites!

Cucumber and Onion Salad

  • 1 cucumber
  • 1/2 onion, sliced
  • 2 tblsp canola oil
  • 2 tblsp apple cider vinegar
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Clean and peel the cucumber.  You don’t have to peel it but I like to take off some of the skin.  Slice the cucumber in half and slice into 1/4″ pieces.  Place in a medium bowl.  Slice the onion in half and slice as thinly or thick as you like.  Mix with the cucumber.  In a small bowl whisk the rest of the ingredients and toss with the cucumbers and onions.

    I love this salad!! If you want a twist, you can do what my mom use to do. Growing up my mom put tomatoes and oregano in it too. Then since we are Italian, we had some crusty bread to dip in the oil.. Yummy!

  3. I made almost the exact salad the the other day!! I used honey instead of sugar because we have so much at our house (my in-laws have honey bees at their ranch in California) and I added some dill. I’ve noticed that my tastes are changing a lot this summer, I have been all about red onion in salads 🙂

  4. Funny my mom introduced me to cucumber salads this weekend… I’ve made a small one every day since. The only thing I do different is add in some fresh dill. Cucumbers taste like summer to me. Love them this time of year!
