Loaded BBQ Chicken Nachos

There are a few things you need to know about me.

I love cheese.

I could marry cheese.

And we would live happily ever after until I ate it all gone and I would be labeled a Black Widow because every “husband” I would have would suddenly disappear with no explanation.

The second thing you need to know is that half of my budget is dedicated to cheese.

Okay, it’s not half but on a more serious note I do spend more for good cheese.  I don’t mind spending $4 for a really good, fresh mozzarella instead of $2.50 for the store brand, pre-shredded kind.  I’ve come to realize {from experience} that I can use less of that fresh mozzarella and get the same result than from the entire bag of pre-shredded cheese.

The more “pure” a cheese is the better flavor, melting ability, and texture it will add to your dishes.

I must add that I do not always have room in the budget for the most expensive cheese.  More often than not I am somewhere in the middle.  I have played around with the cheeses available to me and I’ve discovered what I like and what I don’t like.  I would rather spend an extra $1 or 2 for a cheese that I know will melt better and ultimately have better taste than the cheaper, waxy version.

Knowing my obsession with cheese I was ecstatic when Redwood Hill Farm contacted me to try some of their artisan goat cheese.  When I discovered I could purchase them from a local market I was even more excited!

The more I learned about the company the more pleased I became with the quality of their products and once I experimented with the cheese they sent I was convinced.

It was true love at first bite.

We plan on being married in the Spring.
