Nutella Banana Cream Pie Cookies

Typically I’m a big hot mess but I do have my moments.

Like the moment I came up with these.

They look irresistible, no?

Usually when I’m coming up with a recipe it comes in chunks rather than all at once.  I’ll have an idea, jot it down, then add to it as time goes on.  So the other day I’m flipping through a cookbook all the fabulous women in my neighborhood put together and found a recipe for pudding cookies.

I was like whoa. that sounds yum.

Then I was like hey. I should totally go see what different flavors they have at the store.

Naturally I couldn’t wait, so I hauled three of my kids to the store to stand in the pudding aisle.  And stare at pudding.

While asking them to, ” put the jello back please.”

“No, don’t eat that…it was on the floor.”

“Please don’t race the cart down the aisle, we are not at NASCAR.”

It was fun.  To be completely honest, it really was fun.  So, with three different puddings in hand, we left the store and came home to make these cookies.  In the middle of the process I was making lunch.  My 6 year old loves Nutella Banana Sandwiches so I happened to have the Nutella out.  I also happened to have a box of banana cream pudding.

The rest is history.

And these cookies will also be history so make a double batch.
