Zucchini and Corn Sauté

Why is it that I can remember my mom making this zucchini and corn sauté for our family numerous times over the course of my childhood but I can’t remember that doctors appointment that is on every calendar in my house and has a programmed reminder on my phone!?

Apparently all my memories need to be linked to food.

The best ones involve surrounding the dinner table and rehashing the day, a childhood tradition I’ve carried on with my family.  You want some entertainment?  Ask a 3 year old about his day.  It’s guaranteed to get a laugh.

In fact, listening to all the kids is pretty entertaining and makes me realize how fast they are growing.  I can actually have a real conversation with my 8 year old.  And he asks questions that I can’t answer now.  I think he’s onto me and I can just see my “Mom knows everything” wall crumbling.  Oh, I can not wait for the teen years.

Luckily, in the kitchen, I still reign supreme and I’m hoping I can get away with making this again tomorrow night without hearing “zucchini and corn agaaaaaaain?”

    Funny! I JUST asked my husband on Sunday night: “did you guys ever eat this growing up?” I have always wondered if this was something my family just ‘made up’ or if this is a regular dish around American households. We were sitting over dinner of pulled pork, applesauce and zucchini and corn saute with cheddar. 🙂 I remember having this regularly growing up on the farm!

  3. That’s great you can remember and carry on those cherished family meal time memories. A lot of times those moments can get lost with how busy a family’s schedule can get. Family meal times are a great way to connect with your children and create wonderful memories.
