Tex Mex Meatballs

Despite the fact we raise our own beef I’m always looking for ways to stretch the meat.

I’m not gonna lie, the thought of being able to sneak in a few extra veggies also appealed to me.  Unfortunately half of my kids subscribe to the notion that broccoli is bad, chicken nuggets are good, and ew, what’s that green thing on my plate? Are you trying to poison me?

So Calvin and Hobbes, right?

While I wasn’t able to sneak the extra veggies past them unnoticed they did enjoy dipping these in barbecue sauce.

Okay.  So did I.  Sigh.

With this meal ready in just 30 there’s no excuse not to torture your child with a little sneaky veggie meatball.  With barbecue sauce, of course.

P.S. I’ve entered this recipe to the Mr. Food Search for the Ultimate Weeknight Meal Contest…now we wait.  And eat chocolate while we wait cuz the waiting is the hardest part.

    • That’s actually orzo I’m serving it with which is a pasta. My husband calls it fake rice because it always psychs him out! I love rice but I’m a pasta girl through and through so I absolutely love this pasta.

    Lol! My kids don’t like green or red things on their plate. So I do the same thing….sneak it in where I can! My oldest asks for green smoothies…not knowing why they are called green smoothies cuz they are red in color. .
