Chocolate Dipped Almond Shortbread Cookies with Turbinado Sugar and Sea Salt

I can’t think of anything that is quite as comforting as cookies.  Their sole purpose is to turn a frowny face upside down, to add a little indulgence to your day, and to be completely delicious.

These Chocolate Dipped Almond Shortbread cookies are just that and more.  Granted, they can’t pay your bills or handle the carpool but they can sure make those chores more fun!  The best part is you could probably memorize this recipe in no time flat.  Not too much to remember when there are just a few ingredients.

And it was after just a few handfuls of Trader Joe’s Chocolate Covered Almonds and I was hooked.  These cookies were inspired by those little morsels of goodness and now the only problem I have is trying to decide between the two of them.

Luckily I have a solution.  After sampling one or maybe a few of the cookies I plan on sharing them.  I recently learned about Bake it Forward which is a campaign sponsored by Dixie Crystals Sugar Products.  Basically you can send a smile in a tin and I plan on sending a few smiles myself.  After I give myself one, that is.
