I happened to be walking in the grocery store the other day, it’s something I do a lot, and came upon something I just had to buy. That also happens a lot. “It was on the list…really.” Riiiiight.
The thing that caught my eye was a bag of cinnamon sugar tortilla chips. WHAT!? I mean, I know I can make these at home but who has the time to prepare all that and make enough for six people, five of which are boys. It would take for.ever. And being the naturally lazy person that I am I bought the bag. Okay, two bags. They were on sale.
Shockingly enough they sat in my pantry for a solid week before I remembered I bought them, jumped for joy, and decided to make a sweet dip to go along with them. You all know how I love me a good cheesecake recipe so it was a natural leap.
It was love at first bite, if you believe in that kinda thing. The chips taste very similar to those cinnamon twists you can get Taco Bell. Not that I’ve ever eaten them…a friend told me…yeah. Okay, so they are a guilty pleasure every once in awhile. Mmmm, messy baby.
I’m almost certain this cheesecake dip with be added to the list of guilty pleasures. There are two ingredients which speaks to the simple, lazy person trapped inside me. They are saying, “You have a few minutes and you ARE hungry. You’d hate for those chips to go to waste. And that cream cheese has an expiration date of 6/2014. There’s no way you’ll use it by then if you don’t make this dip now.”
I listened. I made. I devoured. Fortunately I had help in the form of the best company around. A best friend.
