Salted Caramel Peanut Butter Stuffed Cookies {}

They say that necessity begets creativity.  I’m here to tell you it’s true.

These stuffed cookies were created on a Sunday like any other or at least I thought so.  I remembered that I promised our Primary class a treat for their reverence the past week and because they are so darn cute.  And because I really like to bake.   I’m in my kitchen trying to decide what to bake and about 5 seconds later I remember it also happened to be fast Sunday.  So there I was, standing in my kitchen with a dilemma and a growling tummy.

When I am at my hungriest is when the crazy sugar fairy sprinkles me with dust and makes me do crazy things.  Like stuffing caramel and peanut butter and a pinch of salt into a cookie just cuz.  I didn’t eat them just then since I was fasting but you better believe I ate one as soon as I got home.  One word to describe it…euphoric.

The euphoria could have resulted from being hungry and almost anything tastes good if you are hungry enough but then I had one after dinner and had the same reaction so I’m pretty sure it’s just the cookie.

I mentioned in yesterday’s post that I’m dedicating this cookie to my Auntie L.  She is the queen of sweets, both food related and when it comes to personality traits.  I’m not sure which one would win on the sweet-o-meter, the cookie or her, but it would be close.  Not only would she love that this cookie had peanut butter and caramel in it but that it’s really easy to make.  Really!

I could think of no better way to celebrate then to share these cookies after she got back some test results that were pretty darn good.  We cling to these days for the days when the news isn’t so easy to swallow and there aren’t enough cookies in the world to make it better.

Something else that Auntie L loves to do is share.  I’ve had the opportunity to share these cookies on a few occasions already and this time I get to share them with a special friend and colleague as part of  The Leftovers Club.
