Once upon a time a cute girl met a cute guy.  After months of dating they got married.  Years later they bought a house where they made many memories, brought home new babies, and tended to their growing family.  Fast forward seven years and that cute couple are selling their house.  In fact, SOLD their house.

It happened suddenly and cheesecake was indeed necessary.  It just so happens that a friend was also selling their home at the same time and she was the inspiration for this spring combination of lemon with blueberry.  It was shared, thank goodness, or the 5 lbs I’ve already gained would probably have been 10.

Despite the extra pounds it’s been a whirlwind of activity around here.  From packing, to deciding where to live, to continuing to pursue all of our other activities I’ve barely had time to spend in the kitchen…unless I’m packing dishes.  I’m so excited to gain some sanity back and I look forward to that when we move into the in-laws basement next week.

Let’s just say there’s a ping pong table, an awesome kitchen, and more people to feed.  My kinda digs!  I’m so incredibly excited and grateful to join them.

  4. Two of my favorite flavor combinations. My mother use to bake a lemon and blueberry bundt cake; I loved it. No, I devoured it. I use the two flavors often when baking but have not used with a cheesecake or a bundt cake. Definitely need to change that!

  7. Hi very nice cheesecake but do you really mean 50-105 minutes? That’s quite a difference between times.

  8. Regarding the crust, is the shredded coconut sweetened or unsweetened? Cocadas is a very sweet cookie, I can’t imagine adding more sweetness to the crust.
